Saturday morning is that one rare day that both Dan and I get to sleep in. Of course, sleeping in nowadays means 9:00 a.m., but still, it's nice. Last night while we were waiting for dinner to cook, I prepped for this morning's breakfast, and it came out so pretty (and it was so easy) I just had to post - and share the recipe.
Strawberry-Pear Crepes for 2 (makes 5)
Grocery list:
- Strawberries
- 1 red pear
- Melissa's Organic Crepes (no these are not mine, that's the brand name ^_^)
- Powdered Sugar
- Vanilla extract
- Whipped cream cheese
- The night before (or the morning of, whatever) dice about 10-12 strawberries and the red pear. Put them both in a tupperware container, dash about a teaspoon of vanilla onto the mixture. Put the lid on and shake it all up to mix. Put in the fridge overnight to marinate. Make sure when you shake it the lid is on TIGHT or you will get strawberry and pear bits all over the floor. Like me. Anyway:
- When you're ready to make the crepes, take about half the tub of cream cheese and put it into a bowl. Microwave it on half power for 30 seconds. Stir. Put it back in for another 30 seconds on half power.
- Add about 1.5 tablespoons of powdered sugar to the cream cheese, stir to blend. Add about a teaspoon of vanilla to the cream cheese, stir to blend.
- Lay out a crepe on the plate. About 1/3 of the way up, spoon a line of the fruit mixture onto the crepe. Spoon some of the cream cheese in a line on top of it. Take the edge of the crepe and roll it away from you. Note: If you do this in the exact center of the crepe, the thing will tear, and it will be very messy and not photogenic, at any rate.
- Repeat as desired. I made 5 crepes with this.
- Sprinkle with powdered sugar and the leftover fruit mixture. Bon appetite!
